Crock Pot Turkey Chili

Tom’s friend Kevin (aka “The Big Kahuna”) and co-owner of Mai Tai Studios…Your Recording Paradise…has graciously shared his award winning chili recipe. Kevin has entered the annual chili contest in Canoga Park, California, for several years, and this past year came away with the trophy! Way to go Kevin!!!
1 lb. Jenny-O Ground Turkey (lean, not extra lean)
2 cans Chili Beans
1 can Kidney Beans (rinse in cold water)
1 can Petite Diced Tomatoes
1 small can of corn (drained, not rinsed)
2 Yellow Chili Peppers, seeds removed and diced
1 Jalapeño Pepper, diced (leave the seeds in for an extra kick)
1/2 medium white onion, chopped
1/2 bunch fresh cilantro, chopped
1 t. chili powder
1 Packet McCormick & Schmick’s Chili Spice
¼ c. beer (lager or IPA, no stout)
Fry ground turkey in a skillet and season with salt and pepper (about 1 t. pepper and ½ t. salt or to your taste).
Break turkey up with a wooden spoon, after turkey has started to brown, add half of your chopped onion and peppers.
Continue to fry turkey until cooked all the way, add 1 t. chili powder and stir.
In a crock pot, add beans, diced tomatoes, and corn. Stir in turkey meat and add remainder of onions, peppers, cilantro and chili packet.
Add about 1/4 cup of your favorite beer, use a lager or IPA, no stout.
Let cook on low for 6 hours.
